Manual harvest. First fermentation with a controlled temperature with selected yeasts in stainless steel tanks. Post-fermentation in a closed pressure vessel at a controlled temperature with selected yeast at 5 bar. Aging for 60 days. Tartaric acid stabilization: local 'Capuccina modificata' system. Bottling: after sterile filtering.
