Our most traditional Gavi. Its precise and balanced ripeness, perfectly harmonized aging, gives the wine its typical fresh, dry taste. 100% Cortese. Light, almost white color. Sunny, fruity, and fresh character with flavors of white fruit, a hint of nectarine, and a touch of lime. Long, concentrated, and dry finish. Delicate taste, very dry with a very notable acidity.
Very appealing wine for dishes ranging from appetizers to desserts; fish, shellfish, and crustaceans, as well as white meats like poultry.
- climate
-
Warm, gentle Mediterranean winds, which temper the cool mountain air, create the perfect temperature variation for the ripening of the fruit.
- soil
-
Characteristic soil of Alto Monferrato; a clay-limestone composition (clay and limestone).
- vinification
-
50 hectares of vineyards (4,500 plants/ha). 'Grand Cru of Gavi' (best sites in Rovereto and Gavi). 'Sur Lie' method. Special attention to the origin of the grapes and the vineyard, separate vinification (separation of musts from different vineyards/ages: nearly twenty-year-old vines for the Gavi DOCG White Label). Cryo-maceration and cold fermentation (13-14°C) in stainless steel tanks.
