Light, straw yellow colour with shades of green. The nose opens dusty with slightly candied aromas of citrus and grapefruit. A fine pearl accompanies it, accentuating its dry and lively qualities. Delicate ripe notes are nicely balanced with its boldly dosed character. The perfect refreshment on hot, summer days.
Its aromatic yet nice fresh and dry character makes this a summer sparkling wine par excellence. So as a sunny aperitif but also delicious with all kinds of seafood, poultry salads or all sorts of tapas.

The climate is typical for central Sicily. Hot and dry, especially during the growing season. Due to the high altitude, strong cooling during the nights and in winter. Ample rainfall.

100% Catarratto is hand-picked in the early morning at low temperature. Fermentation on inox at 14°C. No Malolactic fermentation to further accentuate the lively character. Then the wine gets its pearl on the same inox barrels. (Methode Charmat - Brut dosed)
