Lambrusco. Origin: Modena. The grapes are stripped from the stem and crushed at the same time, and then pumped into large, modern vessels in which they are fermented on skins for greater color and odor intensity. During the fermentation, oxygen is added to the must. Next, the must is transferred to vessels where it is periodically separated from the dross. The natural foam is made with the Charmat method, which gives a fine and persistent Perlage. Thereafter, the wine is filtered and bottled.
