The Pinot Grigio grapes are a copper colour when ripe. In order to retain the 'coppery' colour, the skins are left in contact with the juice for about 18 hours in order to give the wine this attractive tint. The juice is then fermented at a low temperature (about 15°C) in stainless steel to retain the subtle aromatic characters of the grape.
