The Charmat method, also known as the cuve close method, involves a second fermentation of the wine that does not take place in the bottle but in the (stainless steel) barrel. Sugar and yeast are added to this tank. During this second fermentation, carbon dioxide gas is created that cannot escape and dissolves in the wine.
