100% Nebbiolo. The grapes are picked by hand. Fermentation of 30-40 days without adding yeast in cement vats. Regularly transfer over its must during the first 15 days. Daily pigeage and maceration on the skins for the next 15 days to extract flavor and color. The wine then matures further in small and large used barrels for 12-18 months and a further 6-12 months in cement tanks. After bottling, it remains in the bottle for at least 6 months on the domain before being commercialized.
